Hi friends!! 🤗 I hope you’re doing W O N D E R F U L!! I am SO EXCITED to share with you an amazing dessert I made over the weekend and that is
🥧 C H E R R Y P I E 🥧


Growing up my mom used to make this ALL the time during the holiday season, however; it did not always have the best ingredients in it!! So this year I wanted to venture out and try to make a CLEAN ingredient Cherry Pie and I am so happy to say I have achieved my goal!! YAY!!👏👏 So today I am so excited to share the recipe with you so you can enjoy it this holiday season as well! ✨ So let’s get started!! 🤗

This CHERRY PIE is FREE of Gluten, Dairy, Corn, Soy, Refined Sugars, Artificial Sweeteners, & Peanuts. I actually found the pie crust recipe online on a blog at paloerunningmomma.com, so just want to note I did not come up with the pie crust recipe myself 😊, but it is delicious and I am so happy to share it with you!! 💕

PIE CRUST INGREDIENTS:

  • 1 Cup Blanched Almond Flour (Bob’s Red Mill is my FAV I get it off of Vitacost, but you can get it at any Health Food store)

  • 2 Tablespoons Coconut Flour (I used Nutiva which I typically purchase at a Health food store such as Whole Foods, Sprouts, EarthFare, etc.)

  • 2/3 Cup Tapioca Flour (I used Bob’s Red Mill, which you can purchase at a Health Food store or on Vitacost as well)

  • 1/2 Cup Coconut Oil (Make sure you get Unrefined + Organic if possible)

  • 1 Teaspoon Maple Syrup or Coconut Sugar (When purchasing Maple Syrup make sure it is PURE Maple Syrup, Grade B is best! My favorite Coconut Sugars are Navitas Organics & Madhāva Foods both I order from Vitacost as well)

  • 1/2 Teaspoon Fine Grain Sea Salt

  • 1 Large Egg (Organic if possible)

Side Note: if you want crust on the top of the pie and on the bottom, which is how I made it, you will need to make double the recipe above 👆🏼

PIE FILLING

  • 20 oz Frozen or Fresh pitted Red Cherries (I used frozen in mine)

  • 2 Tablespoon Coconut Sugar spread over the top

  • 1 Tablespoon Coconut Oil spread over the top of the cherries

INSTRUCTIONS:

  1. In a Food Processor, pulse all the PIE CRUST ingredients together except the EGG, until it creates thick crumbs then pulse and process the Egg until a dough forms. Gather the dough into a ball. (Side Note: If the dough feels overly sticky you can wrap it in plastic wrap and place it in the fridge until it hardens some, I did not have to do that when I made it.)

  2. Next, press the dough gently into 9 inch Pie Dish, once you have pressed the dough into the Pie Dish.

  3. Bake the bottom crust at 375 Degrees F for about 4 minutes.

  4. Take the Pie out, ADD the 20 oz Frozen Cherries

  5. Sprinkle 2 Tablespoon of Coconut Sugar over the Cherries

  6. Spread out 1 Tablespoon of Coconut Oil as evenly as you can over the Cherries

  7. ADD your second layer of dough on top. You can roll this set of dough out and lay strips of dough over the top of the Pie which is what I did, OR you can roll the dough out into a flat sheet and gently place it over the top of the Cherries. If you choose the second option make sure you gently pierce the dough with a fork.

  8. Once the top layer of dough is in place, put the Pie back in the oven at 375 Degrees F for about 20ish minutes if you’re using a Ceramic Pie Dish! If you’re using a Metal Pie Dish then only cook it for about 15ish minutes at 375 Degrees F!

  9. Take the Pie out and ENJOY!
